Malgiere Brownies

This recipe is for thick, rich, fudgy brownies.  They are almost cake-like because of their thick-ness, but I have never had anyone complain about them.  Basically they are the best Chocolate Brownie on the planet.  I would not make any other type.  Much better than out of a "box" and soo much easier...

Ingredients
7 eggs (Clifford Farms, Appenzell Farms)
1 1/2 C Brown Sugar
1 1/4 C White Sugar
.55 lb Unsalted Butter
.5 lb Amano Guayas Chocolate  (Click here for another great place to buy this!)
1 Tbsp Vanilla
1/4 tsp Salt
1 1/2 C Flour

Melt Chocolate and Butter in a double boiler-do not stir a lot, just once or twice.  The chocolate should be smooth and silky.  Be sure to cut up the butter into small pieces and put it in the bottom so it melts first and does not allow the chocolate to scorch on the sides of the bowl.

While chocolate is melting beat eggs on medium speed in mixer until slightly frothy and their color has lightened just a little.  Add the sugars and blend thoroughly.  Be sure to scrape the bottom & sides of the bowl-yummy bits of sugar often get stuck there- and blend again..

When chocolate/butter mixture has melted slowly pour into the egg/sugar mixer with blender on a slow speed until thouroghly blended.  Add Vanilla and mix.  Do not overbeat.  Add Flour and Salt, just until mixed.  JUST UNTIL MIXED.

Pour into a 9x13 square cornered pan that is lined with parchment paper (for easy removal.) and Bake at 350° for 45-50 minutes.  Remove from Oven and let cool.

Swirl jam into brownies with a knife and bake! YUM!

To remove from the pan:  Place a cookie sheet on the top of the brownie pan.  Flip the pan over and brownies should slide right out (upside down!)   Remove Parchment paper.  Use another Sheet pan or your serving platter and place on the bottom of brownies and Flip again, removing the First sheet pan.  TaDa!


Serving Suggestions....Cut into 2x2 squares for a large party, or 3x3 squares for home serving.  You can also cut on the diagonal once cut into squares to make them unique and fun!  A Pastry Scraper is a great tool for cutting these.

The easy way to top these is a fine dust of powdered sugar.  Or drizzle a bit of Butcher's Bunches Ramblin Raspberry Jam over them, or JC Schmokin Cherry-DELISH!  Another fun topping is a Slide Ridge Honey Cream Cheese Dressing.  That will be another post.
